I made it a third time. I cooked the beef separately and drained quite a bit of the fat out. I reduced the cayenne and the red pepper flakes by half and put in a minced the jalapeño pepper with the onion/spice mixture. I remembered coriander but forgot the good Mexican oregano I have. Included the black beans again because I like them so much.

Moderately spicy. Not as highly seasoned because I used McCormick chili powder instead of the stuff I'd got at Penzeys. (If using Penzeys, use less than 1/4 cup.)

Served with shredded Monterey jack, diced onion, sour cream and corn chips.

Salted it during the thickening stage with about 1 Tbsp Kosher.

Thinking about using a chipotle and some bacon next time.

Interesting question. Here's mine:

1 - Law Degree from anywhere reputable. This is so I could do some sound contract drafting & editing. And also so I could bring the occasional claim against companies that piss me off, without having to hire a lawyer.

2 - Master in Physics from Cal Tech or MIT. I 'm just fascinated by physics and wish I had learned more about it.

3 - Culinary (just like you) from anywhere reputable.

“It’s also very weird that you accuse me of parroting “the media”–as if I had the remotest idea what “the media” is saying. I eschew almost all television, for one. I’m probably the most media-disconnected person you know."

I know this is too easy, but it was just too easy.

Well, I watch Rachel's show on podcast, when I remember to do so. I watch the Daily Show on Hulu. So much for television. I don't read a newspaper or any other print news publications. And the only newspaper web site I visit regularly is the NY Times--for the food section.

That's not to say I'm ill-informed. But I think it's fair to say that I don't exactly have my finger on the pulse of what's new in the daily news cycle of the mainstream media.
